Carrot soupĀ

Ingredients
- olive oil
- 1 leek, sliced
- 5 large carrots, sliced
- 500 ml vegetable stock
- 1 lemongrass, lightly crushed
- 4 kaffir lime leaves
- 1/2 tsp chilli flakes
How to
- Heat up some olive oil in a saucepan
- Cook the leek for 3 mins
- Add carrots, lemongrass, lime leaves, chilli flakes and stock and bring to a boil and let simmer for 20 mins
- Place the soup in a blender (take the lemongrass out before blending) and puree until smooth
