Thai carrot soup

I love the herbs and spices used in the Thai cuisine and try to use it in a variety of dishes.This soup is quick and easy to prepare and is perfect for a cold day.

Quick and easy soup

Time: 30 mins

Vegetarian, vegan

Serves: 6

Ingredients

  • olive oil
  • 1 leek, sliced
  • 5 large carrots, sliced
  • 500 ml vegetable stock
  • 1 lemongrass, lightly crushed
  • 4 kaffir lime leaves
  • 1/2 tsp chilli flakes

How to

  1. Heat up some olive oil in a saucepan
  2. Cook the leek for 3 mins
  3. Add carrots, lemongrass, lime leaves, chilli flakes and stock and bring to a boil and let simmer for 20 mins
  4. Place the soup in a blender (take the lemongrass out before blending) and puree until smooth
